Alaria-Tofu Stir-fry

This stir-fry is easily adaptable to all texture and flavor preferences. If plant-based protein isn't for you, try shrimp, chicken, or pork instead of tofu.
Ingredients
For the Stir-fry:

1oz Alaria Leaf
-
1 block (16oz) Heiwa or preferred Tofu, extra firm

½ small Red Cabbage, finely sliced
For the Marinade:
-
2 T Sesame Oil
-
3 T Soy or Tamari Sauce
-
2 tsp Rice Vinegar
-
2 tsp Honey, or sweetener of choice
-
2 tsp Sriracha
-
1 tsp Ground Ginger
-
1 tsp Dulse with Garlic
Stir-fry Toppings:
-
2 Green Onions, sliced diagonally
-
Toasted Sesame Seeds for sprinkling
Directions
Pressing the Tofu before marinating:
Remove the Tofu from its package, drain, and pat dry with a towel
Slice it horizontally into 3 roughly ¼” thick slabs
Wrap each slab in a tea towel or a double layer of paper towels and place them on a cutting board
Place another cutting board on top and weigh it down with a heavy object, like a cast iron skillet, for example
Press the Tofu to remove water for 10 minutes
After 10 minutes, change out the towels and press again while doing the other steps of this recipe
Prepping the Alaria:
Snip the Alaria fronds into ½” pieces with kitchen shears
Place the Alaria pieces in a large bowl and cover with water
As the fronds re-hydrate, massage them and remove any shells or other sea debris you encounter
Once Alaria is free of debris and fully hydrated, about 2-3 minutes in water, drain it in a colander and pat it dry
Mix the Marinade:
Combine all of the marinade ingredients in a 2 Cup measuring cup
Whisk them together, and divide evenly, before setting aside
Stir-fry:
Working in batches to not over crowd the skillet (cast iron is preferable), sauté the Alaria with a small splash of the marinade and an extra sprinkle of ginger and Dulse with Garlic, if desired
Cook until Alaria is toasty and somewhat crisp to the touch, about 5 minutes
Set Alaria aside once it is all toasted and unwrap the Tofu
Cut the Tofu into cubes and put into half of the marinade, stir gently to coat
Add the cabbage, working in batches again, if necessary, to the skillet and sauté in the same manner as the Alaria
Once the Cabbage is sautéed, add it to the Alaria
Next, sir-fry the marinated Tofu until crisp on all sides
When Tofu is done, remove it from the skillet and set aside and cover to keep warm
Return the Cabbage and Alaria to the skillet, add any remaining marinade and stir to re-heat and evenly coat
Serve using the Cabbage and Alaria stir-fry as a bed for the Tofu
Top with the Green Onions and Toasted Sesame Seeds
Add an optional drizzle of Sriracha for a little more heat

Recipe Note
Stir-fries are great for using up those last remnants of vegetables hanging out in your fridge. Get creative and explore new combinations of tastes and textures; just make sure to include your sea veggies!
