This simple, yet flavorful side dish is packed with immunity boosting Vitamins C and A, as well as robust flavor. Whether enjoyed on its own or along side Hoppin' John and Cheesy Grits, this dish is a winner!
Kara Ibarguen
Ingredients
2 T Olive Oil
1 Large Sweet Onion, chopped
4 Garlic Cloves, chopped
1 tsp Fresh Ginger, minced
1 lb Collard Greens, de-stemmed & chopped

1 C Smoked Dulse, cut in small pieces

1 Strip (about 1oz) Kelp, cut into small pieces
1 tsp Hot Pepper, minced, to taste
1, 32oz carton Vegetable Broth
Directions
Heat the oil and sauté the onions for 2 mins
Add Ginger & Garlic and sauté for 3 mins
Add the Collards, Kelp, and Dulse and sauté 2 mins, adding the hot pepper after 1 min
Add the vegetable broth and simmer until tender, about 45 mins
