Elevate your sandwich game with this toasty, melt-in-your mouth, vegetarian version of a classic. Smoked dulse replaces the traditional bacon so it is good for you and the planet.
Kara Ibarguen
Ingredients
1 Ripe Tomato, sliced thin
4 Large leaves Green Leaf Lettuce

¼ of a 2oz bag of Smoked Dulse

OR ¼ oz regular Dulse
8 Slices Sourdough or other Bread of choice
1 Cup Mayo, vegan or regular

1 T Kelp Flakes
3-4 T Butter (or Oil) for toasting
Directions
Combine the mayo and Kelp Flakes, set aside
Slice Tomatoes and prepare Lettuce leaves, set aside
Heat an electric griddle or frying pan to medium heat
Once pan is warm, add the Smoked Dulse to the dry pan
Stir it occasionally, until it is crisp and has changed color slightly, about 2 minutes. Dulse will turn a darker red in some places and to a greenish color in others.
Remove Dulse from the pan and set aside for now
Spread the desired amount of Kelp Mayo on the inside of the bread while allowing the butter to melt in the pan
Working in batches, if necessary, add the bread slices, Mayo-side-up, to the pan and allow to toast, checking frequently until desired toastiness is achieved, 2-3 minutes
Once Bread is toasted, remove the slices from the pan and place on a cutting board Mayo-side-up still
Assemble the sandwiches. Add Dulse, then Lettuce, then Tomato slices to one slice of bread. Then cover with another slice.
Cut and serve immediately
Recipe Note
Optional:
Spread some of the Kelp Mayo on the outside of the bread for toasting as well as inside the bread for extra deliciousness.
