Ingredients
1 lb Jacob's Cattle Beans
2 Garlic Cloves, chopped
1 Yellow Onion, coarsely chopped
2 T Extra Virgin Olive Oil
3 1/4 Cups Water
1/4 Cup Maine Maple Syrup
1/3 Cup Molasses
1/4 Cup Brown or Dijon Mustard

1/2 tsp Sea Salt with Sea Veg
1/4 tsp Black Pepper

2 Strips Whole Leaf Kelp
Directions
This Recipe is intended for use with an Instant Pot:
Set Instant Pot to "Sauté"
Add the Olive Oil, Onion, and Garlic
Sauté for about 3 minutes
Add some water and allow to simmer until tender, about 5 minutes
Add the rest of the water and all the other ingredients
Stir to combine
Seal the lid and set the Instant Pot to "Manual" for 90 minutes
After the alarm sounds, allow to rest for 10 minutes
Use the "Quick Release" method after the 10 minutes
Stir and serve
Recipe Note
If the large pieces of Kelp are undesirable, remove the kelp entirely; most of the nutrients have already been added to the beans. Or the Kelp can be chopped up and replaced into the dish for added fiber.
