This Miso Soup Recipe takes a little more time than the Instant Miso Soup, but you will appreciate the subtle layering of flavors and textures in this version

Ingredients

2, 5” Strips Alaria
1 Med Onion, diced
1 Bunch Bok Choy, coarsely chopped
4 Cups Water, divided
1 T Miso of choice (Adzuki, Chickpea, Barley, etc)
2 tsp Toasted Sesame Oil, divided
6 oz Extra Firm Tofu, in small cubes
Sliced Green Onion for garnish
Directions
Soak the Alaria in 2 cups of the water for 10 mins
Meanwhile, chop the Onion and Bok Choy
Also slice the Green Onion and cut the Tofu into small cubes, set aside
Chop Alaria into bite-size pieces and sauté with Onion in 1 tsp Sesame Oil
When onion is almost tender, add the thick, fibrous parts of Bok Choy
Add the soaking water and the other 2 Cups water and simmer for 20 minutes
Add the Miso, other 1 tsp sesame Oil, and the tender parts of the Bok Choy and simmer an additional 10 minutes
Divide among three bowls
Top each one with 2 oz Tofu and Green Onion slices
Recipe Note
Drizzle with Sriracha or other hot sauce, if desired
