Wow your guests with a unique and refreshing seaweed, cardamom, and rosemary infused beverage this holiday season or anytime! This drink blends the slight briny, nuttiness of laver with the warm spice of cardamom, the earthy aroma of rosemary, the crisp tartness of grapefruit, and the subtle fizz of prosecco (or seltzer in the mocktail). Ingredients
8oz Gin or Vodka

1/8 Cup Laver
1 Cup Water
1 Cup Sugar
2 Rosemary Sprigs
5 Cardamom Pods

1/8 Cup Laver
2 oz infused Syrup
½ C Grapefruit Juice
Splash Prosecco or Seltzer
-
2 tsp Kelp Powder
2 tsp Sugar
Rosemary Sprigs
Grapefruit Peel Twists
Laver Infused Gin or Vodka
Rosemary-Cardamom-Laver Infused Syrup
Mixers & Garnish
Directions
Infused Spirit
Pour 8 oz Gin or Vodka into a jar with an airtight lid
Add the 1/8 Cup Laver
Seal and store for 12-24 hours
Infused Syrup
Bring Water, Sugar, Rosemary, & Cardamom Pods to a simmer in a saucepan until the sugar is dissolved
Remove from heat and allow to cool for 5 minutes
Add the Laver
Allow to cool completely
Strain out the Rosemary and Laver
Use right away or store in an airtight container for up to a week
Crafting the Cocktail (makes 2 cocktails)
Strain the Laver from the Vodka or Gin
On a small plate combine 2 tsp Kelp Powder & 2 tsp Sugar
Moisten the rims of two rocks glasses with a small amount of grapefruit juice
Invert the glasses and dip into the Kelp-Sugar mixture, set aside
Fill a cocktail shaker with ice
Pour in 4 oz of Infused Gin or Vodka
Add 2 oz Infused Syrup
Add ½ Cup Grapefruit Juice
Shake to combine
Strain into the rimmed glasses filled with fresh ice
Top with a splash of Prosecco
Garnish with a Grapefruit twist, a piece of Laver, and a sprig of Rosemary
Crafting the Mocktail
Rim two rocks glasses with Kelp-Sugar mixture, set aside
Fill a shaker with ice
Add 3 oz Infused Syrup
Add ½ Cup Grapefruit Juice
Shake to combine
Pour ice and all into the glasses
Fill with seltzer
Garnish with a Grapefruit twist, a piece of Laver, and a sprig of Rosemary
