Enjoy a sweet ending to your Southern cuisine meal with this healthier take on a favorite. Irish Moss adds minerality, creamy texture, and a hint of brine to this otherwise classic dish. Dig in!

Ingredients
6 Cups Sliced Fresh or Frozen Peaches
3/4 C Granulated Sugar

1 1/4 tsp Irish Moss Powder
6 T Butter
1/2 C All-purpose Flour
1/2 C Whole Wheat Flour
1/2 C Granulated Sugar
2 tsp Baking Powder

1/4 tsp Sea Salt with Sea Veg
3/4 C Milk or Half & Half
Ground Cinnamon, to taste
Directions
Add the Peaches, Sugar, & Irish Moss to a saucepan
Stir to combine and cook on medium until the sugar is dissolved and the Irish Moss has thickened the mixture
Remove from heat and set aside
Preheat oven to 350°
Slice the butter into a deep pie plate or 9x13 baking dish
Melt the butter in the oven while it preheats
In a large mixing bowl combine the Flour, Sugar, Baking Powder, and Sea Salt
Stir in the Milk and melted Butter until smooth
Spoon the Peaches into the pan & then spoon the batter mixture on top
Sprinkle with Cinnamon to taste
Bake at 350° for approximately 35 mins or until golden brown and batter is cooked through
